Winter Melon Soup


large can chicken broth
   1/2 lb boneless pork
   1 lb slice winter melon
   4 scallions
   2 t sesame oil

   Bring broth to a boil.

   Cut meat into 1/2-inch dice and add to broth.

   Cut rind off melon, cut flesh into 3/4-inch cubes, and add to soup.

   Boil gently for 25 minutes.

   Clean scaalions and cut into fine slices.

   Add scallions just before serving soup.

   Add sesame oil and serve.                 .
