Original version from Barbara Chau, Livermore, CA. 443-4522 WOR MEIN 1/2 lb. noodle 1/4 lb. shrimp, shelled and clean 1/4 lb. pork, shredded 4 dry mushrooms, soaked in warm water and shredded 1/2 lb spinach or 1/4 lb. snow peas sliced barbecued pork and abalone ( may omit ) 1 green onion, diced 1 qt. chicken stock 1 tsp salt ( divided ) 1 tbsp + 1 tsp soy sauce 4 tsp oil ( divided ) 1/8 tsp pepper 2 tsp sherry ( divided ) 1 tsp sesame seed oil 1. Bring 2 qts. of water to a boil, drop in noodles, bring to a boil again, lower heat and cook noodles for 2 ninutes. Drain, run cold water through noodles in drainer. 2. Mix pork with 1/4 tsp sslt, 1 tsp soy sauce, 1 tsp oil and 1 tsp sherry. 3. Mix shrimp with 1/4 tsp salt, pepper and 1 tsp sherry. 4. Heat 2 tsp oil, stir fry the vegetable with 1/2 tsp salt until changed color. 5. Give the pork and the shrimp a oil bath separately. Set aside. 6. In a pan, heat 1 tsp oil, stir in mushrooms, stir for a few seconds, add chicken stock, bring to a boil. 7. Add noodles to stock, bring to a boil, add pork, shrimp, barbequed pork, abalone, and the vegegtables. Stir just the meat and vegetables untill well mixed and the stock boils through. 8. Top with green onion, sesame seed oil, and 1 tbsp soy sauce. Serve hot. ( fill wontons & boil for Wonton Wor Mein )
