MAMMA'S VEAL CUTLETS 1 pound of veal cutlets, sliced very thin 1 cup flavored bread crumbs 3 or 4 large eggs olive or peanut oil First bread the veal cutlets with the crumbs and set aside. In a mixing bowl, place the eggs and beat very well. Dip breaded cutlets in egg mixture one by one, until crumbs are absorbed by mixture and cutlets are coated with this thick batter. Heat 4 tablespoons of oil in a frying pan to medium hot. Fry the cutlets until golden brown on both sides. Remove from pan and place on paper towels to absorb excess oil. Use more oil as needed. Serve plain with lemon wedges. Variation: Top each cutlet with tomato sauce and shredded mozzarella cheese and bake in 300-degree oven for 20 minutes, for Veal Parmesan. SERVES 4-5.
