TITUS CHAN'S SALAD AS MODIFIED BY JILL MILLER chicken: 2 c shredded cooked chicken Mix chicken with marinade at least 1/2 hour before serving Marinade: 1 t sugar 4 t sherry 4 t oyster sauce 1 t sesame oiL 4 T red vinegar 4 t soy sauce 1 t salt dash pepper 4 t salad oil Greens 2 C lettuce {at least. some romaine) 2 C chinese cabbage 1 c chopped scallions 1 c celery 1 bunch chopped parsley Topping: 1 cup chopped peanuts Just before serving, mix chicken/marinade With greens and 3/4 of the peanuts Top with remaining chopped peanuts.
