THIN PANCAKES 4 eggs 1 cup flour 4 teaspoons sugar 1/2 teaspoon salt 1/4 teaspoon Baking Powder 2 cups nulk 2 tablespoons water 1 banana (optional) In a blender at medium speed beat eggs until well beaten. Add dry ingredients all at once to eggs. Gradually add milk at a slow speed. Add water last and continue to mix at a faster speed. Batter will he very thin. Use Pam or a small amount of margarine on the bottom of a 6" fry pan. Add about 1/4 cup batter and coat the bottom of pan with the batter. You may need a bit less or more according to the size of pan. Fry on one side for about 1 minute , loosen sides of pancake and turn. Fry an additional few seconds and remove from pan. Fill with jam and roll up. Sprinkle with powdered sugar. Almost any kind of filling will work; fresh fruit or a meat combination, are just two ideas.
