TARRAGON CUCUMBER SALAD DRESSING 2 unpeeled diced cucumbers 2 tablespoons tarragon vinegar or white vinegar 1 tablespoon minced fresh tarragon or 1 1/2 teaspoons dried 1/4 teaspoon salt 1 scallion, minced I egg 1/2 cup vegetable or olive oil Puree the cucumbers in a food processor or blender. Add the vinegar, tarragon, salt, scallion, and egg. Process until smooth. With processor going, pour the oil in a thin stream. Serve over a green salad, spinach salad, or parboiled vegetables.
