Recipe by Barbara Chau STEAMED FISH 1 whole fish ( Rock cod 1 1/2 - 2 lb ) ( Bass, Sea Perch ) 2 green onions, out into inch lengths and then shredded 2 pieces of ginger, shredded 2 tbsp cooking oil 3:tbsp dark soy sauce Wash and clean fish inside and out. Pat dry with paper towel. Bring water in the lower part of the steamer to a boil. Put the fish (on a dish) in the steamer. Steam on high heat for 10 ninutes. In the mean time, heat the oil until it smokes. Take the fish out and transfer it to a serving platter. Top with the green onions and ginger. Pour soy sauce on top, and last of all, top with the hot oil. Serve right away.
