ARROZ CON TOMATE (Spanish Rice) 1/2 cup chopped green bell pepper 1/4 cup chopped onion 1 clove garlic, minced 1/2 teas. dried basil, crushed 1/2 teas. dried rosemary, crushed 2 tablespoons 0i1* 1 cup long grain rice 1 can (l6oz) chopped, peeled tomatoes (or 1 quart jar home canned tomatoes) 1 teas. salt 1/8 teas. pepper In skillet cook green pepper, onion, garlic, basil, and rosemary in hot oil till vegetables are tender. Stir in rice, chopped tomato, salt, pepper, and liquid from canned tomatoes plus enough water to equal 2 cups liquid altogether Wait for it to start to simmer first, then cook covered, over low heat for about 25 minutes or till rice is done.
