Recipe by Barbara Chau 443-4522 SOY SAUCE CHICKEN 1 fryer (around 3 lbs.) 3 pieces ginger 2 green onions 1/4 C Chinese dark soy sauce (or 3/4 C and no soy sauce) 1/2 C soy sauce 1/4 C water 2 tbsp sigar 1 tbsp sherry 2 star anise 2 tbsp cooking oil 1. Heat oil in pan and fry the ginger and green onions. 2. Add the chicken and fry until both sides are slightly brown. 3. Add soy sauce, water, sugar, sherry, star anise and bring to a boil. Simmer for 30 minutes, turning once. Let stand in the sauce for four hours or over night. Heat up before serving. Cool slightly before cutting into serving pieoes.
