Sicilian Meat Roll 2 beaten eggs 3/4 C bread crumbs 1/2 C V8 (for lots of flavor) or tomato juice 2 T parsley 1/2 t oregano, crushed 2 lbs ground beef 8 thin slices boiled ham (or proscuitto) 6 to 8 oz shredded or sliced mozzarella 3 slices mossarella, cut in half diagonally, or shredded 1/4 t salt, or to yaste 1/4 t black pepper, or to taste 1/2 t garlic powder, or 1 clove very finely minced Combine eggs, bread crumbs, V8 or tomato juice, parsley, oregano, salt, pepper, and garlic. Stir in ground beef, mixing well. On foil or waxed paper, pat meat to a 12" by 10" rectangle. Arrange ham slices atop meat, leaving a small margin around edges. Sprinkle shredded cheese over ham. Starting from short side, carefully roll up meat, using foil to lift it. Seal edges and ends. Place roll, seam side down, in 13x9x2 inch baking pan. Bake at 350 F for 1 hour and 15 minutes, or until done. Place cheese slices on top of roll and return to oven for 5 minutes, or until cheese melts.
