Shredded beef filling 3 pounds chuck roast / 3 tablespoons lard 1 medium onion, diced 2 cloves garlic, crushed 1 teaspoon salt 1/4 teaspoon pepper 1 teaspoon cumin 1 can (l6 oz) solid pack tomatoes, pureed in blender Coriander to taste Cover meat with cold water. Bring to boil, cover, and simmer 2 to 2~ hours. Cool to handle easily. Shred meat. Slightly brown shredded meat in lard; add onions and garlic. Allow onion to cook soft. Add salt, cumin, pepper, tomato puree, and coriander. Simmer 1/2 hour uncovered. Do not allow to dry out. If necessary, add small amounts of broth or water to maintain a moist mixture. Enough filling to fill 12 tacos or 8 burritos. I
