Noodles
Soy sauce
Rice or distilled vinegar
Sesame seeds
Cook dry or fresh noodles.
Judy prefers the large-diameter, fresh noodles.
Drain. Return noodles to pot.
Toss with soy sauce and vinegar until you get it just right.
Transfer to serving dish and sprinkle with sesame seeds.
This is vague and I do not know if is Chinese or Japanese, so both.
