Dimsum menu -- 1989 Page 21 Sesame Flat Breads .(Shao Ring) "`% Makes 20 breads. 4 c all-purpose flour 2 o cake flour (1 1/2 t salt) 2 3/4 C boiling water ROUX: 3/4 c peanut oil 1 c all-purpose flour 1/4 c white sesame seeds Mix flour and water to a rough dough. Knead five minutes, then cover and let rest 30 minutes. Heat saucepan very hot. Add oil and heat to 350 OF. Add flour for roux and cook over medium heat until nut-brown and very fragrant. Cool. Roll dough into 14 x 10 rectangle. Spread with roux to an inch from each edge. Roll up and pinch ends. Cut into 20 slices, and pinch ends. Roll each piece into 6 x 4 rectangle with pinched edçes On short sides. Fold into thirds. Turn 1/4 turn and repeat. Dip bottom into sesame seeds, and roll to 6 x 4, Place each bread sesame side down on ungreased baking sheet. Bake at 400 oF for 12 minutes, until fllaky and crisp, turning once. Serve immediately. To reheat, bake at 350 oF 5-7 minutes, until crisp and hot.
