Original version from Barbara Chau, Livermore, CA. 443-4522 ROAST CHICKEN 1 whole chicken, about 3 pounds 3 green onions 2 pieces ginger 1/3 cup cooking sherry 1 tsp sugar 1 tsp salt 1 cup soy sauce 1 star anise 3 cups water 1. Mix all ingridents except the chicken in a large pan. Bring to a boil. 2. Add chicken, breast side down. When water mixture comes to a boil again, lower the heat and simmer for 15 minutes. Turn off heat, turn chicken and let stand in the liquid for another 15 minutes. For better flavor, have each side of the chicken stand in the liquid for an hour or over night. 7. Bake chicken on a rack in preheated 450 F degree oven for 30 minutes. (breast side up for 20 minutes, turn and hake for 5 minutes. Turn back to brest side for the last 5 minutes.) 4. Cool for 20 minutes and cut into small pieces. ( Line the roasting pan with foil to reduce the mess. ) ( good )
