RED COOKED PORK WITH MUSHROOMS AND BAMBOO SHOOTS Original version from Barbara Chau, Livermore, CA. 443-4522 l 1/2 lbs. pork, a little fat is preferab1e cut into inch cubes. (butt) 16 small sIze dry mushrooms, soak in water 1/4 C. cloud's ears, soak in water and then clean (can add an egg) 1 large can bamboo shoots, cut into inch cubes 2 pIeces ginger 1/4 C Chinese dark soy sauce 1 1/4 C water l tbsp sherry 3 star anise 2 tbsp sugar 1/4 tsp salt 2 tbsp oil 1. Heat oil in pan, put in ginger, then add pork and stir fry until pork changed color. Add sherry, dark soy sauce, star anise, sugar, salt and water. Simmer for half an hour. 2. Add bamboo shoots and mushrooms and cook for another half hour. 3. Add cloud's ears and cook for half an hour more or until pork is tender. If water dries out during cooking, add a bit more. Skim off oil and serve hot.
