P0SOLE (poh-soh-leh) (Pork & Hominy Soup) 1 1/2 lb. pork, (1 inch cubes) 1 can (29 oz) white Hominy, Drained 1 med. onion 1 can (16 oz) stewed tomatoes 1 clove garlic, minced 2 teas. salt or to taste 2 teas. oregano 1 tbls. hot chile powder 3 or 4 serrano or jalapenos, chopped 2 quarts water 3 tbls. lard Brown the pork in lard. Then add all other ingredients and simmer for 1 1/2 - 2 hrs. Serves 6. Serve in large bowls and let people garnish as they wish, as all garnishes will be in separate bowls. Garnishes: Hot Salsa Shredded lettuce Chopped radishes thinly sliced green onions chopped avocado shredded Jack cheese lime wedge& - juice to be squeezed into soup
