PIE CRUST recipe from Alice (by way of her X-mother-in-law), Julie Maxie's daughter Cut in: 2 C flour 3/4 C Crisco, or lard 1/4 teaspoon salt Beat until frothy: 1 Tablespoon lemon juice 1 egg yolk 1/4 C cold water(ice water) Add liquid to flour, and mix in. May need more water if air is very dry. Place in a plastic bag and blend in flour,if necessary. Keeps in refrig for a quite a long time. Plenty for a 10" two crust pie. PiE CRUST MIX TOGETHER 2 cups flour 3/4 cup shortening (lard best- Crisco fine) 1/4 teaspoon salt ADD 1 tablespoon lemon juice 1 egg yolk 1/4 cup ice cold water Cut shortening into flour and salt. Beat lemon juice, egg yolk, and water until frothy. Add liquid to dry ingredients. Mix with a fork with as few motions as will do the job. PIE CRUST -- QUICK Makes 4 12" circles 1 # butter 4 C flour 1 T + 1 t sugar 2 t salt 1/2 C iced water In bowl of a food processor, combine the butter and dry ingredients. Process just until mixture resembles coarse meal. Add iced water a bit at a time until dough pulls away from the bowl and forms a solid mass. Remove from bowl and knead once or twice on a floured surface. Divide dough into four pieces. Roll each into 12" circle. Use one and freeze the remaining three.
