Tsa Chiang Mein (Peking Meat Sauce Noodles) 1 lb lean pork, minced (or ground pork) 1/2 cup bean sauce 1 TBS hoisin sauce 2 scallions, finely chopped 1/4 cup oil (or less) 3-4 tsp sugar 1/2 lb cooked noodles (spaghettini or Chinese flat noodles) bean sprouts, shredded radishes, shredded cucumber for garnish 1. Heat oil in wok. Stir-fry pork for 3 minutes. 2. Add bean sauce and hoisin sauce. Stir-fry for 2 min. 3. Add sugar and cook 3 min. 4. Add scallions and stir to blend. 5. Serve noodles in individual bowls, garnishes in separate dishes. Diners place garnish over noodles, then spoon several tablespoons of the meat sauce over the noodles.
