Original version from Barbara Chau, Livermore, CA. 443-4522 ( EXTRA GOOD GOOD ) OYSTER SAUCE BEEF WITH GREEN ONION 1/2 lb. flank. steak, sliced 1/8 tsp baking soda 1 tsp cornstarch 1/2 tbsp soy sauoe 3 tbsp oooking oil ( divided ) 1 egg white 1/8 tsp sugar 1 tbsp water 2 tbap oyster sauce 4 green onions, cut into 1 inch lengths Mix the beef with the soda, cornstarch, soy sauce, 1 tbsp oil, egg white, water, and the sugar. Let stsnd for at least 10 to 20 minutes. Add green onions to the beef. Heat 2 tbsp oil until very hot, stir in beef mixture and stir in Pan until all the beef ohanges color (about 2 minutes). Add oyster sauce and remove to serving platter. LING LAM BEEF Same as oyster beef except omit onions and use 2 tbsp sugar in 2 tbsp dark soy sauce instead of oyster sauce. Cook briefly after adding it.
