Old Fashioned Potato Salad Serves 8 4 cups diced potatoes 1 1/2 cups sliced celery 1/2 cup chopped scallions 1/4 cup sliced radishes 2 tablespoons snipped parsley dressing: 1 cup mayonnaise 2 teaspoons prepared mustard 1 tablespoon cider vinegar 1/2 teaspoon celery seeds 1 teaspoon salt 1/2 teaspoon pepper Place potatoes in a saucepan and cover with water. Bring to a boil, reduce heat to medium and simmer until potatoes are tender when pierced with a knife, 15 to 20 minutes. Drain potatoes. In a large bowl, place celery, scallions, radishes, and parsley. For the dressing, whisk together the mayonnaise, mustard, vinegar, celery seeds, salt, and pepper in a bowl. Add cooled potatoes to the large bowl with the other vegetables. Add dressing and toss together well. Chill until ready to serve. Serve on lettuce leaves.
