Mexican Dip Layer in order: 1. 1 can refried beans (Old El Paso). 2. Mix together: 3 avocados crushed and pureed (be sure they are ripe. Should be quite soft to the touch). 2 Tbl. lemon juice. salt and Pepper to suit. 3. 1 cup sour cream 1/2 cup mayonaise 1 pkg. taco seasoning (1 1/4 oz. Old El Paso) 1 can (small) hot chili peppers drained Mixed together 4. 3 chopped tomatoes (Be sure they arent too ripe or the dip will be runny). 5. 1 bunch chopped scallions. 6. 1 can large black olives, pitted and sliced. 7. 8 ox. shredded cheddar cheese.
