MARINATED MUSHROOMS 1/3 cup wine vinegar 2/3 cup olive oil (or salad oil) 1 tablespoon chopped parsley 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon sugar 1 tablespoon lemon juice 1 clove garlic 2 pounds small fresh mushrooms, washed Combine vinegar, oil, parsley, salt, pepper, sugar, and lemon juice in a huge old Mason jar or anything that has a cover. Add garlic clove (still intact) and mushrooms. Cover and marinate several days or hours in the refrigerator. Remove garlic and serve. This one is great for a party because you can make it on Wednesday or Thursday night and forget about it until zero hour. Serves 12.
