Lettuce Wonder Recipe by Barbara Chau, Livermore CA 1/2lb chicken meat, finely chopped (or ground turkey) 1/2lb ground pork 2 celery stalks, chopped 6 dry mushrooms, soaked in warm water and chopped 10 fresh water chesnuts, chopped (or bamboo shoots or canned) 20 lettuce leaves 1T soy sauce 1t salt 1 egg white 2t cornstarch 1t sugar 4T cooking oil SAUCE: 1 1/2 t soy sauce 1T water 1t cornstarch 1t salt 1t sesame seed oil 1. Marinate the meat in soy sauce, salt, egg white, cornstarch, and sugar. Set aside. (Touch only when frying. Do not stir too soon.) 2. Heat 2T oil and fry the meat mixture until well done. 3. Heat 2T oil and fry celery for a few seconds. Then add mthe mushrooms, stir for a few seconds, add water chesnut, stir. Add the meat mixture and sauce, stir until well mixed. 4. Wrap 2T of filling in a pice of lettuce and serve like a a taco.
