Original version from Barbara Chau, Livermore, CA. 443-4522 LETTUCE WONDER ( minced pigeon ) 1/2 lb chicken neat, finely chopped ( ground turkey ) 1/2 lb ground pork 2 pieces oelery, chopped 6 dry mushrooms, soaked in warm water and ohopped 10 fresh water chestnuts, chopped ( bamboo shoots, or canned ) 20 lettuce leaves (Romaine works well) 1 tbsp soy sauce 1 tsp salt 1 egg white 2 tsp cornstarch 1 tsp sugar 4 tbsp cooking oil (divided) Sauce: 1 1/2 tsp. soy sauce 1 tbsp water 1 tsp cornstarch 1 tsp salt . 1 tsp sesame seed oil Marinate the meat in soy sauce, salt, egg white, cornstarch and sugar. Set aside. ( The original recipe called for cooking the meat first, setting it aside, and adding it to the vegetables. This works better. ) Heat 2 tbsp oil. and fry the meat mixture until well done. Set aside. Heat 2 tbsp oil and fry the celery for a few saconds, then add the mushrooms, stir for a few seconds and add the water ohestnuts. Mix well, then set aside. ( You may want to change the order of vegetables, depending on your preferences for crunchy and chewey. ) Heat 2 tbsp oil. and fry the meat mixture until well done. ( Do not stir too soon. ) Add the vegetables and sauce. Mix well, scraping in the brown bits. Serve Each diner takes a piece of lettuce and fills it with the mixture. ( taco style ) ( extra, extra good ) (Water chestnuts will keep 2 - 3 weeks )
