Lemon Meringue Pie Sift together into the top of a double boiler 1 C sugar 3 T flour 3 T corn starch 1 t salt and add 1 1/2 C boiling water cook in the double boiler until thick, about 15 minutes. Add 1/2 C lemon juice grated rind of 1 lemon 2 egg yolks, slightly beaten Cook about 2 minutes longer. Cool. Turn into cooled pie shell. Beat 2 egg whites until frothy Add 4T sugar and 1/4 t baking powder. Beat until it stands in peaks. Add meringue on top of pie. Brown in 325 F oven, about 15 minutes.
