Hand Shredded Chicken Original version from Barbara Chau, Livermore, CA. 443-4522 [ good for sandwich ] [can use chicken breast 15 - 20 min ] (2) 1 chicken, a 3 lb fryer 2 tbsp oil 1 piece green onion 1/3 C. soy sauce 3 tbsp sherry 1 tsp salt . . 2 tsp sugar 1 star anise. . . . . 1 C. water . ... . . . .. . 1. Heat the oil, put in ginger and green onions. Fry the chicken until both sides are slightly brown. 2. Add all the other ingridents, bring to a boil and simmer chicken for 30 minutes, turning once. 3. Marinade chicken in the juice over night, turning a couple of times. 4. Shred chicken meat with hands. Mix meats with 1 1/2 tbsp Sesame seed oil and l tsp soy sauoe.
