Griddle Cakes 2 C all-purpose flour 2 t baking powder 2 t sugar 1 t salt 3 eggs lightly beaten 2 C milk 1/4 C melted butter 1/4 c vegetable oil Sift the flour, baking powder, sugar, and salt together info a large mixing bowl. Mix well. Make a well in the flour and pour in the eggs and milk. With a large spoon, mix together only enough to blend, then stir in the melted butter. Do not overmix; the pancakes will be lighter if the batter is not too smooth. Heat a griddle or heavy skillet over moderate heat until a drop of water evaporates instantly. Grease very lightly. Make 4" pancakes. Cook 2 to 3 minutes, until small scattered bubbles appear but have not broken. Flip and cook about one more minute. Stack on a heated platter and serve with melted butter and maple syrup. you can add one cup of fruit or chocolate chips.
