GLAZED DUCK , Remember this version of duck when you are planning a dinner for guests. It is impressive, delicious, and seems to be a new experience for most people. Timing of menu: Duck, 1 hour and 50 minutes. Sweet pota­ toes (canned), 20 minutes. Petit pois with a few canned white onions added, 10 minutes. BECIPE: GLAZED DUCK 1 quartered duck 1/2 cup orange marmalade 2 tablespoons honey 1 teaspoon Gravy Master 1 can sweet potatoes 1. Turn the oven on to 325 F 2. Cut the duck into quarters. Salt and pepper the pieces, and place them, skin side up, on a rack in a roasting pan. 3. Cook in a 325 F oven for 1 1/2 hours. 4. Spread half the orange marmalade over the skin side of the duck. 5. Mix together 2 tablespoons of honey and 1 teaspoon of Gravy Master, and spread half of this on top of the marmalade, painting the pieces of duck in the best fashion possible (some will slide off, but it cannot be helped). 6. Put the sweet potatoes on the rack around the duck, and coat these with the rest of the orange marmalade and the honey mixture in the same fashion. 7. Turn the oven up to 400°, and let the duck and potatoes cook for about 20 minutes more until everything is beautifully glazed.
