Cousin Selma's Pancake My cousin, Selma Lewis, was one of the most popular girls at Vanderbilt University when she was a student there. She's bright, pretty, laughs a lot and gloriously, and - something I didn't know until I visited her and her husband recently in Memphis - is also a great cook. Here's a sample: 1/2 cup flour 1/2 cup milk 2 eggs, lightly beaten Pinch of nutmeg 8 tablespoons butter 2 tablespoons sugar Juice of half a lemon Preheat oven to 325°. In a mixing bowl, combine the flour, milk, eggs, and nutmeg. Beat lightly, leaving batter a little lumpy. Melt butter in a 12-inch skillet with heatproof handle. When very hot, pour in batter. Bake in oven 15 to 20 minutes or until golden brown. Sprinkle with sugar and return briefly to oven. Sprinkle with lemon juice, then serve with jelly, jam, or marmalade. Serves 4 to 6.
