COLD GREEN BEAN AND BACON SALAD 20 oz fresh green beans or frozen thawed 1/2 pound bacon, diced 1 bunch scallions, chopped 2 T chopped parsley 1/3 cup olive oil I Tiemonjuice 2 T white wine vinegar Salt and freshly ground black pepper to taste Blanch green beans in boiling water for 1 minute. Drain well and rinse in cold water to cool. Drain well again. Cook the bacon until it is almost crisp. Drain the fat. Combine the beans, bacon, scallions, and parsley in a bow!. Mix together the oil, lemon juice, and vinegar, Add to the bowl of heans and toss together. Add salt and pepper to taste. Refrigerate for 2 to 3 hours. Toss the salad a couple of times while chilling.
