Recipe by Barbara Chau 443-4522 PAN FRIED NOODLE (Chow Mein) 1 lb fresh egg noodle 1/2 lb. pork, shreded 1/2 lb. shrimp, shelled and cleaned, cut in half 6 dry mushrooms, soak in warm water and slice 1 small can bamboo shoots, slice 2 lb. Chinese green cabbage, cut into inch length5 2 eggs, pan fry and. slice 1 tsp salt 1 tsp soy sauce 4 tbsp oil . 1/8 tsp pepper 2 tsp sherry Sauce 2 tbsp cornstarch 3/4 cup water 1/2 tsp sugar 1 tbsp soy sauce 1/2 tsp salt 1. In a large pan, bring 3 quart5 of water to a boil. Drop in nood1es, bring to a boil and cook for 5 more minutes. Drain, run cold water through noodles. 2. Mix pork with 1/2 tsp salt, soy sauce and 1tbsp oil. 3. Mix shrimps with 1/2 tsp salt, pepper and sherry. 4. Mix sauce. 5. Fry half of the noodles in 1 1/2 tbsp oil in frying pan until both sides turn light brown. Pry the other half of the nood1es. 6. Fry por, when done, set aside. Fry shrimps, set aside. Fry green cabbages, add mushrooms bamboo shoots. Then add the pork and shrimps. Add sauce, bring to a boil, pour on top of the noodles. 7. Put cut eggs on top of the meat nixture.
