Chinese Pizza

3 cups flour                               v
1 cup boiling water
2 tsp salt
3 green onions, finely chopped
6 tbsp shortening

1.  Place flour in a bowl, add salt, gradually pour in water and mix well.  
When cool enough to handle, knead the dough until smooth,
adding more flour if necessary.
Cover and let dough rest for 20 to JO minutes.

2.  Divide dough, green onions and the shortening into three equal parts,
(each piece of dough gets one green onion and 2 teaspoons of shortening)

3.  Roll each piece of dough into a 8 to 10, inches round.
Spread 1/3 of the 2 teaspoons of shortening on top of the circle,
then sprinkle 1/3 of tne one green onion on top.
Cut the rolled out dough into four strips as in figure A,
then lay the four strips end to end as in figure B into one long strip.  
Roll up the strip, jelly roll fashion.

4.  Place the rolled up pizza on a floured board as in figure C,  Press down the

pizza flat and roll out the pizza again.

5.  Repeat steps 3 and 4 two times.  
(uses up all of 1 green onion and 2 teaspoons of shortening)

6.  Make the other two pizzas the same way.

7.  Heat a 10" frying pan with about 1 tsp oil and pan fry the rolled out 10"

pizza over medium high heat until golden brcv/n.  Turn and fry the other side.

8.  Cut pizza into small pieces as in figure D., Serve hot.
