Chimichangas (Chee-mee-chan-gas) Try to get the platter-sized flour tortillas for making Chimichangas. You can make a smaller version with regular-sized (7-inch) flour tortillas. 12 flour tortillas 2 1/2 cups shredded beef filling or shredded chicken 1 1/2 cup of each: shredded Jack cheese chopped onions Spoon 3 tablespoons filling down the center of tortilla. Fold tortilla around filling. If you need to you can fasten with wooden toothpicks. Fry in i-inch of hot oil over medium heat (about 350 F) until they turn golden brown, about 1 OR 2 mins. You should turn them over once. Drain on paper towels. Serve with Sour cream, Guacamole, Salsa. Sprinkle Green onion, radishes and or Black olives on top.
