Chile Tomato Sauce 1 medium-size onion, minced 2 Tablespoons veg. oil or Safflower oil 3 1/2 cups tomato puree 2 cloves garlic. minced 4 Tablespoons chile powder 1/2 teaspoon ground cumin seen 1/2 teaspoon dried oregano 1 teaspoon salt Saute onion in salad oil just until limp and yellow. Add tomato puree and garlic. Gradually stir in chile powder. Add cumin seed, oregano, and salt. Cover and simmer at least 30 minutes, stiring frequently. Strain through a medium-fine wire strainer. Makes about 3 cups.
