Pan-fried Chicken Coat quartered 2 to 2 1/2 lb. frying chicken by shak- ing in sack containing Seasoned Flour (above). Place in heavy skillet in 1/2" hot fat. Turn to brown evenly, 15 to 20 min. Add 3 tbsp. water; cover and cook over low heat on top of range 45 to 60 min., or until tender. Uncover last 5 to 10 min. to recrisp. 2 generous servings.
