Easy Oven-fried Chicken 1/4 cup shortening 1 frying chicken (2 to (part butter) 2 1/2 lb.), quartered Seasoned Flour (right) Heat oven to 425° F (hot). Melt the fat in a shallow baking pan in oven. Wash and dry chicken. Place Seasoned Flour in paper sack. Drop in a quarter of chicken at a time. Flour chicken by shak- ing sack, holding it closed with hand. Arrange floured chicken skin-side-down in baking pan in single layer. Bake 45 min. Turn skin-side-up and continue baking about 15 min., until tender. Serve hot with Pan Gravy (p. 121). 2 generous servings.
