Chicken Cacciatore (Hunter Style) One 3-pound chicken, cut up About 2 T butter, olive oil, or other shortening 1 clove garlic, chopped fine or through press 1 whole pimento cut into 1" squares 1/2 t oregano or thyme 1/4 t black pepper About 1 1/2 t salt 2 T flour 2 T or more sherry with 1/2 C tomatos 1/4 lb fresh mushrooms, sliced thick and sauteed in 2T butter Heat shortening. Brown chicken over moderate heat. Sprinkle all other ingredients except mushrooms over chicken. Cover. Simmer about 40 minutes for fryer, 60 for roaster. Add more wine or tomatoes is chicken seems dry. Turn chicken several times while simmering. When chicken is tender, add mushrooms and cook uncovered 5 minutes.
