BEEF WITH BROCCOLI 1 lb beef ( london broil, top or bottom round, flank, sirloin) 4 tbsp soy sauce 1 tbsp corn starch 1 tbsp dry sherry 1 tsp sugar 1 slice ginger root 1/4 cup sliced green onions 1/2 tsp salt 1 bunch fresh broccoli 1. Cut beef across the grain in thin slices. 2. Mix sliced beef with soy sauce, corn starch, sherry, sugar and set aside. 3. Cut the broccoli into flowerets about 2" long. 4. Pour 2tbsp oil in a hot skillet over high heat. Add salt and broccoli. Stir and turn constantly until broccoli is dark green --about 2 minutes. Remove from skillet and spread out on a plate. 5. Put remaining 3 tbsp oil in same skillet, still over high heat. Add ginger, stir in beef mixture and keep turning constantly until almost done --- 2 minutes. 6. Add green onions. 7. Add the broocoli to the beef and mix or place on a platter and arrange broccoli on sides. Original version from Barbara Chau, Livermore, CA.
