Original version from Barbara Chau, Livermore, CA. 443-4522 BEEF WITH ASPARAGUS 1/2 lb. flank steak, sliced 1/8 tsp baking soda ( or use a little lemon juice ) 1 tsp cornstarch 2 tsp soy sauce 1 egg white 1/4 tsp sugar 1 1/4 tsp salt (divided) 3/4 lb. asparagus 1 green onion, cut into inch lengths 2 pieces ginger 5 tbsp cooking oil 3 tbsp water (divided) Sauce 2 tbsp water 1/2 tsp cornstarch 2 tsp soy sauce 1/2 tsp sugar Desolve baking soda in soy sauce. * Add oornstarch, egg white, sugar, 1 tbsp water, and 1/2 tsp salt. Mix. Add beef. Stir to coat. Set aside. Break off wooden part of asparagus. Then slice thin diagonally. Mix sauce. Heat 2 tbsp cooking oil, add 3/4 tsp salt, then add the asparagus. Stir for a few seconds. Add water (2 tbsp) and cover for about 2 minutes. Remove from pan and set aside. Heat 3 tbsp oil. When hot, add green onion, ginger and the beef. Stir until the meat changes color. Add asparagus and the sauce. Bring to a boil and stir until well mixed. ( Or use chicken instead of beef, and omit the egg and baking soda. ) ( Can use other vegetable, bok choy, cauliflower, lettuce, snow peas, string beans, etc. Cook them with a little bit of water. ) ( the baking soda helps keep the vegetables green. ) ( very good )
