Beef Romanoff 2 T milk-free margarine 1 pound beef cut into 1/4 inch strips 3/4 pound sliced mushrooms 3/4 T chopped onion 1 T milk-free margarine 2Tflour 1 c coconut milk 2 T dry white wine 1 c beef broth Melt margarine in skillet. Brown meat strips and add mushrooms and onions. Cook 4-5 minutes. Remove meat and mushrooms. Add margarine and flour. Stir in beef broth. Cook and stir until bubbly. Return meat and mushrooms to pan. Stir in coconut milk and the wine. Cook slowly until heated through but do not boiL Makes 4 servings. Beef a Ia Romanoff is especially good served over hot rice or noodles.
