Almond Tau Fu Original version from Barbara Chau, Livermore, CA. 443-4522 Method I 2 envelopes Knox unflavored gelatine 1 cup cold water 2/3 cup sugar . 1/4 tsp salt 1 1/2 cup boiling water 1 1/2 cups canned milk [ 2 cans, each 5.33 oz, 1 1/3 cup ] 2 tsp almond extract 1 can fruit oocktail (17 oz.) 1 can lychee, drained 1. Sprinkle gelatine on cold water to soften. Add sugar and salt, boiling water. Stir until thoroughly dissolved. Add milk and almond extract. Chill until set. 2. Cut set Almond Tau Fu with knife into small pieces. 3. Serve with the fruit cocktail (with juice) and the lychee. Method II 1/4 oz. Agar Agar 3 cups cold water 1 cup sugar 1/2 cup canned milk 1 tsp almond extract 1 can mandarin oranges 1. In a pan, cook the agar agar in 1 1/2 cups of water over low heat for about 10 minutes. Add 1 cup sugar. Strain into a bowl. 2. Add milk, almond extract, stir until we1l mixed. 3. Add 1 1/2 cups of cold water, stir well chill until set. 4. Cut set A1mond Tau Fu into small pieces and serve with mandarin oranges.
