Almond Float  (Xing Ren Dou Fu)


      1 envelope unflavored gelatin
      1/3 C sugar
      1 0 milk
      2 t almond extract
      green or pink food coloring (if-desired)
      1/3 c cold water
      3/4 o boiling water
      1 can lychee fruits
      1 can iocjuat fruits
      1 jar maraschino cherries (if desired)
      1 small can pineapple chunks

      i.  soften gelatin in 113 o of cold water in a mixing bowl.

      2.  Add 3/4 c boiling water and stir until completely dissolved.

      3.  Add sugar and mix well.

      4,  Add milk and mix well.

      5.  Add almond extract and mix well.

      6.  Add food coloring if desired to shade.

      7.  Chill in refrigerator 8-10 hours or overnight.

      B.  Cut gelatin into cubes and serve fruit over gelatin with syrup from the
`Th   lychees.
